Instant Pot Greek Chicken and Orzo

Instructions
Tzatziki Sauce
Squeeze out the water from grated cucumber using paper towels. Set aside
In a large bowl add the garlic, apple cider vinegar, and olive oil. Stir well with a whisk. Add yogurt, black pepper, and fresh dill and mix in. Refrigerate until ready to use.
Oil and Balsamic Vinaigrette
Combine all ingredients in a small bowl with a wire whisk until well blended. Refrigerate until ready to use.
Instant Pot Greek Chicken and Orzo
Add chicken breasts to Instant Pot or pressure cooker in single layer. Sprinkle salt and pepper over chicken evenly. Continue adding the next 8 seasonings through the paprika. Add 1/4 cup water. Replace lid and turn vent to sealing position and pressure cook for 10 minutes. Release pressure manually. Transfer chicken to a cutting board and dice into 3/4" cubes and then place in a dish along with the juices and cover. Set aside.
Add orzo and 1 cup water to Instant Pot. Turn vent back to sealing position. Pressure cook for 8 minutes. Release pressure and add orzo to dish with chicken and stir together. Squeeze lemon juice over chicken and orzo.
Arrange Greek Chicken and Orzo Bowls
Toss together the greens, cucumber, tomatoes, olives and feta cheese. Portion out into bowls. Add chicken and orzo next and then follow with 2 wedges of pita bread and a dollop of the tzatziki sauce. Drizzle the oil and balsamic vinaigrette dressing over the salad.
