Favorite Valentine's Day Pancakes

Ingredients
  

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 2 tbsp granulated sugar
  • 1 egg
  • 1 cup milk
  • 2 tbsp unsalted butter, melted
  • 1-2 tbsp extra-virgin olive oil

Instructions
 

  • Preheat griddle to medium high heat or 375℉.
  • Combine dry ingredients in a medium bowl with wire whisk. Add egg, milk, and melted butter and stir until ingredients are just incorporated, batter will have small lumps and that is okay.
  • To test griddle, sprinkle a drop of water onto griddle and if it sizzles then the griddle is ready. Otherwise let it continue to preheat more. Place pancake mold on griddle and brush olive oil on inside of mold and on griddle in middle of pancake mold.
  • Pour batter to fill molds 1/3 full. Allow to cook for 2-3 minutes, until you see bubbles start to form on top of pancake and bottom is golden brown. When ready to flip, pull up on pancake mold handle and give it a shake until pancake wiggles out. Be sure bottom of pancakes are golden brown which allows them to cook enough to hold together when flipping. Then flip using a pancake turner and cook another 2-3 minutes. Repeat for remaining batter.
  • Top with powdered sugar, a bit of butter and syrup. Fresh berries + powdered sugar is a great way to enjoy pancakes too!

Notes

I would recommend cleaning off the pancake molds in between uses to ensure pancakes come out looking great each time because a little may still stick to the mold even after brushing them with oil.
