The Everyday Mediterranean Salad is a salad you can get excited about over and over again. It's made with hearts of Romaine, cucumber, kalamata olives, chickpeas, red onion, and plenty of feta cheese.
1cucumberpeeled, halved lengthwise, seeded and cut into 1/2 inch pieces
10 ozcherry tomatoesquartered
Kosher or Pink Salt
Black Pepper
2clovesgarlic
3tbspapple cider vinegar
3tbspolive oil
1canchickpeasrinsed, drained
1/2cupKalamata olivespitted
1/3large red onion, finely chopped
1/2cupfresh chopped parsley
1Romaine lettuce heartcut into 1/2 inch pieces
1cupfeta cheese crumbles
Instructions
Toss cucumber and tomatoes into a colander and add pinch salt and let drain for 10-15 minutes.
In a large bowl, whisk vinegar and garlic together. Slowly add olive oil while whisking continuously. Add cucumbers and tomatoes, chickpeas, olives, red onion, parsley and toss together well.
Let sit for 10-15 minutes while chopping up Romaine lettuce.
Add Romaine lettuce and feta cheese and gently toss salad to combine ingredients. Serve and add salt and black pepper to taste.
