Everyday Mediterranean Salad

The Everyday Mediterranean Salad is a salad you can get excited about over and over again. It's made with hearts of Romaine, cucumber, kalamata olives, chickpeas, red onion, and plenty of feta cheese.

Ingredients
  

  • 1 cucumber peeled, halved lengthwise, seeded and cut into 1/2 inch pieces
  • 10 oz cherry tomatoes quartered
  • Kosher or Pink Salt
  • Black Pepper
  • 2 cloves garlic
  • 3 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • 1 can chickpeas rinsed, drained
  • 1/2 cup Kalamata olives pitted
  • 1/3 large red onion, finely chopped
  • 1/2 cup fresh chopped parsley
  • 1 Romaine lettuce heart cut into 1/2 inch pieces
  • 1 cup feta cheese crumbles

Instructions
 

  • Toss cucumber and tomatoes into a colander and add pinch salt and let drain for 10-15 minutes. 
  • In a large bowl, whisk vinegar and garlic together. Slowly add olive oil while whisking continuously. Add cucumbers and tomatoes, chickpeas, olives, red onion, parsley and toss together well. 
  • Let sit for 10-15 minutes while chopping up Romaine lettuce. 
  • Add Romaine lettuce and feta cheese and gently toss salad to combine ingredients. Serve and add salt and black pepper to taste.
