Preheat oven to 425℉. Place cooling rack inside a rimmed baking sheet and spray with non-stick spray or olive oil spray and set aside.
Make an assembly line. In a shallow dish, add the flour and poultry seasoning and mix together well. In a 2nd shallow dish, add the beaten eggs. In a 3rd shallow dish, add the crushed fritos.
Start by sprinkling the salt and pepper over the chicken tenders. Coat a chicken tender in the flour mixture and shake off excess. Dip in the egg mixture on all sides and then coat the chicken with the crushed chips. Add to baking sheet and repeat for remaining chicken tenders.
Bake chicken tenders for 20 minutes.

Meanwhile mix the ranch dressing and buffalo sauce together and store in fridge until ready to use
