1. In food processor, pulse rolled oats and pecans separately. You still want some coarseness to both ingredients. It took me about 15 times for each ingredient.
2. Add all ingredients to a large bowl and mix with rubber spatula. I used my hands also to combine ingredients.
3. Shape into balls and place on cookie sheet to freeze for 30 minutes.
Optional: microwave 1/2 cup white chocolate chips for 30 seconds at a time until melted. Stir with spoon and dip balls into white chocolate to freeze.
I store these in the freezer to keep their shape and I think they taste even better frozen!
