Best Whole Grain Waffles with Raspberries

Ingredients
  

  • 2 large eggs
  • 1-1/2 cups milk
  • 3 tablespoons maple syrup
  • 3 tablespoons olive oil
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups white whole wheat flour I used King Arthur Flour brand
  • Optional:
  • 1/4 cup dark chocolate chips
  • 6 oz carton fresh raspberries

Instructions
 

  • 1. In large mixing bowl add 2 eggs and beat lightly with wire whisk. Add remaining ingredients except flour and mix with whisk until combined. Add flour and mix into ingredients with rubber spatula.
  • 2. Spray waffle maker with non-stick spray. Preheat to medium-low heat. Add batter to waffle maker and cook according to manufacturer's directions.
  • 3. Heat dark chocolate chips in microwave safe bowl for approximately 40 seconds. Stir to create even consistency. Top waffles with raspberries, and bit of dark chocolate.
  • 4. 4. Fill some raspberries with dark chocolate- fill spoon full of melted chocolate and let drip into raspberries

Notes

Note cook time is for one waffle and recipe makes about 6 waffles.
