1. If using KitchenAid Ice Cream Bowl attachment, place bowl in freezer at least 15 hours prior to use. Otherwise prepare ice cream maker according to manufacturer's recommendations.
2. In a large bowl, combine whipping cream, milk, pudding mix, yogurt, crushed pineapple, and rum and vanilla extracts.
3. Using immersion blender, mix well just until ingredients are incorporated. Pour into KitchenAid Ice Cream Bowl (on Speed 1) and mix for 15-20 minutes. Freeze for 2-4 hours or until ice cream has set. May use other ice cream maker and freeze according to directions of manufacturer.
