Glorious Green Hummus

Ingredients
  

  • 2 cups spinach
  • 1 cup arugula
  • 1/2 cup cilantro
  • 1/4 cup green onion
  • 2 cloves fresh garlic
  • Juice from 1 large lemon
  • 3/4 cup olive oil
  • 4 cups chickpeas rinsed well in cold water
  • salt and pepper to taste

Instructions
 

  • Add spinach, arugula, cilantro, green onion, garlic, lemon juice, and olive oil to a food processor. Process contents until consistency is creamy.
  • Add chickpeas to mixture and blend until smooth.
  • Transfer hummus to serving bowl and serve immediately.
  • Enjoy!
