Dark Chocolate Brownies

Ingredients

  • 1 cup unsalted butter
  • 2 teaspoons Starbucks Mocha flavored ground coffee
  • 10 ounces dark chocolate
  • 1 1/2 cups granulated sugar
  • 1/2 cup light brown sugar packed
  • 4 eggs
  • 2 teaspoons vanilla
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons unsweetened cocoa powder

Instructions

  • 1. Preheat oven to 350 degrees F and line 9x13 baking pan with parchment paper.
  • 2. Combine chocolate and coffee in small saucepan. Cut butter up into small pieces and add it to choclate and ground coffee. Melt chocolate, making sure to stir constantly. When melted, mixture should be smooth.
  • 3. Remove saucepan from heat and add granulated and light brown sugars. Use a hand whisk to mix ingredients together. Mixture will be grainy.
  • 4. Add mixture to stand-up mixer with whisk attachment. Add 2 of eggs and beat on medium power for good 10-15 seconds. Add remaining 2 eggs and vanilla and beat another 15 seconds, stopping once to scrape sides of bowl. This step is important for the consistency of brownies.
  • 5. Combine flour, salt, cocoa in small bowl. Add to brownie mixture and using a rubber spatula, carefully fold in flour mixture just to the point when you can barely see any more flour.
  • 6. Pour batter into pan and bake at 350 for 30 minutes. Remove and place in refrigerator for 1/2-1 hr to cool before cutting into brownies.
