Salsa Verde (Tomatillo Salsa)

Ingredients
  

  • 1 1/4 pounds tomatillos husked
  • 1/2 large white onion quartered
  • 2 jalapenos seeded
  • 1 green pepper quartered and seeded
  • 4 garlic cloves peel on
  • 1/2 cup cilantro chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt

Instructions
 

  • BROIL VEGGIES: Position a rack near the top of the oven. Preheat broiler for ten minutes. On a broiler pan, add the tomatillos, white onion, jalapenos, green pepper, and garlic. Broil for about 8 minutes making sure to watch veggies closely so that they have a nice char but do not burn. Rotate pan after 3-4 minutes. Remove from oven and let cool for 5 minutes.
  • PREPARE VEGGIES: Remove the stem, membranes, and seeds from jalapenos as well as the peel from the garlic cloves.
  • PROCESS: Add broiled veggies, cilantro, lime juice, and salt to a food processor. Process ingredients to desired consistency. For best results, refrigerate for 1-2 hours and then serve.
