Brown ground beef. Add taco seasoning and 1 tablespoon water. While meat is cooking, slice avocado and chop tomatoes.
ARRANGE QUESADILLAS:
In heavy cast iron skillet, heat 1 tablespoon olive oil on medium-high heat for 2-4 minutes. Lay out tortillas and add ground beef, cheese, tomatoes, and avocado slices to one side of tortilla and fold over other half. Turn heat down to medium and cook quesadillas for a couple minutes per side. Keep a close eye on quesadillas so they do not burn. Remove from heat.
ADDITIONAL TOPPINGS:
Cut quesadillas in half and top with salsa, ranch, and fresh lime juice if desired.
