Cozy Slow Cooker Chicken & Wild Rice Soup

Ingredients
  

  • 1 1/2 cups brown and wild rice blend
  • 1 1/4- 1 1/2 lbs chicken thighs skinless and boneless
  • 1 onion diced
  • 2 cups celery chopped
  • 2 cups carrots chopped
  • 1 small sweet potato peeled and chopped
  • 2 bay leaves
  • 2 teaspoons dried parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 6 cups low-sodium chicken stock
  • 1/2 cup heavy cream

Instructions
 

  • Combine all ingredients except the heavy cream in a large slow cooker.
  • Cook on low for 6-8 hours. Remove bay leaves. Shred chicken thighs.
  • In a medium bowl, add heavy cream and 1-2 scoopfuls of soup.
  • Slowly whisk soup into cream and return mixture back into slow cooker and incorporate into remaining soup.
  • Season with salt and pepper to taste.
