Quick & Easy Cherry Almond Granola (With coconut oil)

Ingredients
  

  • 2 cups whole grain oats
  • 1/2 cup slivered almonds
  • 1/4 cup coconut
  • 1/3 cup dried sweetened cherries
  • 1/4 cup brown sugar
  • 2 tablespoons coconut oil melted
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 2 teaspoons flax seed
  • 1/3 cup dark chocolate chips

Instructions
 

  • Preheat oven to 300 degrees
  • In a medium bowl, mix oats, almonds, coconut, flax seed, and brown sugar.
  • In a separate bowl, combine melted coconut oil, honey, vanilla, and salt. Pour liquid ingredients into dry ingredients and distribute evenly.
  • Line a baking sheet with parchment paper and spread granola out in thin layer. Bake for 20-25 minutes or until lightly toasted.
  • Let granola cool. Mix in dried cherries and dark chocolate chips.
  • Enjoy!

Notes

For variation, may mix in other dried fruits, white/milk chocolate chips.
