Skinny Turkey Reuben Sandwich (The Rachel)

Delicious skinny turkey reuben sandwich aka Rachel Sandwich without cutting taste. The Russian dressing is great! This sandwich is simple, quick, and so tasty! A great sandwich choice if enjoy a lighter taste than the traditional reuben or just feel like switching things up a bit!

Ingredients
  

Russian dressing

  • 1 cup light miracle whip
  • 1 tablespoon horseradish
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup ketchup
  • 1 teaspoon shallot or onion minced
  • 1 tablespoon parsley minced

Sandwich

  • 4 slices rye bread lightly toasted
  • 2 teaspoons olive oil spread I used I Can't Believe It's Not Butter olive oil spread
  • 2 teaspoons Russian dressing
  • 1/2 pound deli turkey sliced
  • 1/2 cup sauerkraut drained
  • 2 slices Swiss cheese

Instructions
 

Russian dressing

  • Combine all of the ingredients in a small bowl and mix until well incorporated. Set aside or refrigerate until ready to assemble sandwiches.

Sandwiches

  • Preheat oven to 400 degrees Fahrenheit. On a baking sheet, lay out 4 pieces of rye bread.
  • Thinly spread 1/2 teaspoon olive oil spread and Russian dressing to each slice of bread.
  • Add Swiss cheese, sauerkraut, and turkey to two slices of bread.
  • Cover with the remaining two slices of bread and add remaining 1/2 teaspoon olive oil spread to top of sandwich.
  • Bake at 400 degrees F for 12-15 minutes or until golden brown.
