Sausage, Egg, and Cheese Strata with Peppers and Onions

A most delicious breakfast strata with sausage, egg, and cheese with some peppers and onions for added flavor! This strata is so good you won't mind eating it for breakfast, lunch, or dinner. While it may fit in to that casserole category, the taste is simply one you won't forget.

Ingredients
  

  • 1 pound ground sausage
  • 4 eggs
  • 1 cup yellow onion diced
  • 1 cup red and/or green bell pepper diced
  • 2 1/2 cups half and half
  • 1 teaspoon dried sage
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 5-6 slices bread cut into cubes-recommend asiago cheese bread
  • 2 cups sharp cheddar cheese grated

Instructions
 

  • Preheat oven to 350℉ and grease a 9x13x2 baking dish.
  • Cook and brown sausage over medium-high heat. Add peppers and onions and cook until softened, another 3-4 minutes.
  • Transfer sausage and veggies to a plate lined with paper towels to drain.
  • In a medium bowl, whisk together the eggs, half and half, sage, salt, and pepper.
  • For the bottom layer, arrange the cut up pieces of bread evenly.
  • Spoon the sausage and veggies over the bread and then pour the egg mixture over the sausage.
  • Sprinkle the cheese on top.
  • Bake at 350℉ for about 30 minutes or until casserole is set in the middle.
  • Let cool for 10-15 minutes.
