Healthy Salmon Cakes in 20 Minutes to crush your evening meal prep blues. Top them off with avocado slices because it makes for the perfect flavor combo and the sriracha mayo gives them just the right kick!

- 8 ounces salmon filet
- 1/2 cup panko
- 1 egg
- 1/2 cup spinach
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 avocado sliced
Fish Rub
- 1 teaspoon chile powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cinnamon
Sriracha Mayo
- 1/2 cup Miracle Whip light
- 1 garlic clove minced
- 1 tablespoon Sriracha sauce
- 1/2 tablespoon lemon juice
- Pinch salt
Salmon Patties
Remove skin from salmon.
Add salmon, panko, egg, spinach, and lemon juice to bowl of food processor. Pulse until mixture is smooth.
Shape mixture into patties that are about the same thickness. Sprinkle fish rub on both sides of salmon patties and rub in so it sticks to the patties. Use about 1/4 teaspoon rub per side. You will probably not use all of the rub.
In a large skillet or cast iron pan, heat olive oil on medium heat. Add salmon patties to skillet. Cook for 4 minutes and then flip patties and cook for about another 4 minutes.
Serve patties topped with avocado slices and Sriracha mayo.
