Almond Butter Spring Blossoms

3 Scoops of Sugar
The spring and summer version of peanut butter blossoms which are one of my two favorite cookies. These almond butter cookies are simply delicious.

Ingredients
  

  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup almond butter
  • 1 egg
  • 1 1/2 cup flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 30 candy pieces- either Hershey®️ kisses or KitKat®️ white minis
  • pastel colored sugar for rolling dough in

Instructions
 

  • Preheat oven to 375℉.
  • In a large bowl of a stand mixer, beat sugar, brown sugar, almond butter, and egg.
  • Gradually add flour, baking soda, baking powder, and salt.
  • Roll dough into 1 inch balls. Roll each dough ball into colored sugar and place on ungreased cookie sheet about 2 inches apart.
  • Bake for 7-10 minutes. Edges should be light brown in color. Press candy in center of cookie.
  • Transfer to wire cooling rack.
  • Enjoy!

Notes

Store cookies in sealable plastic container at room temperature or in the refrigerator.
