Asian Lettuce Wraps with Ground Turkey

Ingredients
  

  • 1 tablespoon peanut oil
  • 1 medium onion chopped
  • 1 pound ground turkey
  • 1/2 cup Asian peanut sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon soy sauce + additional for dipping if desired
  • 1 cup carrots finely julienned
  • 6 Romaine lettuce leaves or whatever lettuce you prefer for your wraps

Instructions
 

  • Heat peanut oil in large skillet over medium-high heat.
  • Add chopped onion and cook for 3-5 minutes or until softened.
  • Add ground turkey and cook until brown and cooked through.
  • Add peanut sauce, hoisin sauce, 1 tablespoon soy sauce, and carrots. Stir well until heated through.
  • Gather washed and thoroughly dried lettuce leaves.
  • Spoon turkey mixture into lettuce leaves and serve immediately.

Notes

Turkey mixture can be made up to 8 hours ahead of time and then reheated in a skillet.
