Healthier Waffles with Cinnamon Apple Topping

Breakfast waffles with warm, glazed cinnamon apples, crushed pecans, greek yogurt, and almond butter with a sprinkle of powdered sugar on top.

Ingredients
  

  • 3 eggs separate whites from yolks
  • 2 cups buttermilk
  • 6 tablespoons unsalted butter melted
  • 1 tablespoon vanilla
  • 1 cup white whole-wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt

Apple topping

  • 3 Golden Delicious apples thinly sliced
  • 2 tablespoons unsalted butter
  • 2 teaspoons cinnamon
  • 3 tablespoons light brown sugar

To serve

  • greek yogurt
  • banana slices
  • crushed pecans
  • powdered sugar
  • almond butter

Instructions
 

  • In a large skillet, add butter and melt over low heat. Add apple slices, cinnamon, and brown sugar. Cook until apples become soft, stirring frequently at first and occasionally after ingredients become more incorporated. Let apples remain warm over low heat until ready to serve.
  • Meanwhile, add the egg whites to a medium bowl and beat with a handheld mixer for 4 minutes or until stiff peaks form. Set aside.
  • In a large bowl, combine the egg yolks, buttermilk, melted butter, and vanilla. Whisk ingredients together until well incorporated. With a wooden spoon, stir in the flours, baking powder, baking soda, salt, and cinnamon.
  • Add a scoop of the egg whites to the batter and stir. Repeat with the remaining egg whites and stir until egg whites are no longer seen.
  • Cook in waffle iron according to manufacturer's instructions.
  • Serve with a dollop of greek yogurt, crushed pecans, apples, almond butter, and a sprinkle of powdered sugar. Add a few banana slices too if you like!
