Simple Baked Cod with Cucumber Orange Relish
Megan
Deliciously baked cod made simple by searing it and then baking. There is so much added flavor with the orange cucumber relish on top. It's one of my favorite ways to eat cod!

Baked Cod
Preheat oven to 400℉.
In a small bowl, combine ingredients for juice sauce. Set aside.
Season cod fillets with salt and pepper.
Heat 1 tablespoon olive oil in a cast iron pan over medium heat.
Sear cod for 1 minute SKIN SIDE UP.
Flip fillets over, pour the juice sauce over fillets and bake for 8-10 minutes, checking fish after 8 minutes to prevent it from getting overdone. Fish that is done is opaque and flakes.
