Simple Baked Cod with Cucumber Orange Relish

Deliciously baked cod made simple by searing it and then baking. There is so much added flavor with the orange cucumber relish on top. It's one of my favorite ways to eat cod!

Ingredients
  

Cucumber Orange Relish

  • zest of 1 orange and then diced small, remove most of the white pith that you can
  • 1 cucumber peeled and diced
  • 5-6 mint leaves chopped
  • 1 tablespoon apple cider vinegar
  • 1/8 teaspoon kosher salt
  • 1/2 teaspoon granulated sugar
  • 1/8 teaspoon black pepper

Cod

  • 1 lb cod fillets cut into about 8 oz portions
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Juice Sauce for Cooking Cod

  • zest and juice from 1 orange
  • zest and juice from 1 lemon
  • 1 teaspoon olive oil
  • 1/8 teaspoon kosher salt

Instructions
 

Cucumber Orange Relish

  • In a medium bowl, combine all the ingredients for the relish and combine. Refrigerate until ready to serve.

Baked Cod

  • Preheat oven to 400℉.
  • In a small bowl, combine ingredients for juice sauce. Set aside.
  • Season cod fillets with salt and pepper.
  • Heat 1 tablespoon olive oil in a cast iron pan over medium heat.
  • Sear cod for 1 minute SKIN SIDE UP.
  • Flip fillets over, pour the juice sauce over fillets and bake for 8-10 minutes, checking fish after 8 minutes to prevent it from getting overdone. Fish that is done is opaque and flakes.
  • Top with cucumber orange relish and serve immediately.
