Blackberry Muesli Breakfast Cups

Breakfast cups layered with fresh blackberries mashed together with greek yogurt and muesli topped off with more blackberries and coconut flakes.

Ingredients
  

Muesli

  • 1 cup old-fashioned oats
  • 1 1/2 cups milk of choice
  • 1 tablespoon chia seeds
  • 1/4 cup sunflower seeds
  • 1 teaspoon vanilla

Blackberry Yogurt

  • 1 cup greek yogurt
  • 1/2 cup fresh blackberries mashed

Toppings

  • fresh blackberries
  • unsweetened coconut flakes

Instructions
 

Muesli

  • In a medium bowl, combine all muesli ingredients and mix well. Set aside.

Blackberry Yogurt

  • In a separate bowl, combine mashed blackberries with yogurt until well incorporated.

Blackberry Muesli Cups

  • After the 15 minutes, layer cups with blackberry yogurt first and then the muesli. Top the cups with fresh blackberries and coconut flakes. Refrigerate for at least 30 minutes and up to 24 hours. Enjoy!

Notes

These blackberry muesli cups can be enjoyed right away after making, but I think they get even better after being in the fridge for a bit!
I used vanilla yogurt in this recipe but you could certainly use plain greek yogurt too.
