Berry Delicious Spinach Salad

The perfect mix of spinach, red cabbage, quinoa, berries and avocado topped with a honey poppy seed dressing.

Ingredients
  

  • 6 cups baby spinach stems removed
  • 1 cup red cabbage shredded
  • 1/2 cup quinoa any kind
  • 1 1/2 cups fresh berries I used raspberries and blueberries
  • 1 avocado peeled, pitted and sliced
  • Topping: sliced almonds

Poppy Seed Dressing

  • 1/4 cup olive oil
  • 2 tablespoons cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon poppy seeds
  • 1/4 teaspoon salt
  • 1/2 teaspoon dijon mustard

Instructions
 

Poppy Seed Dressing

  • In a mason jar, combine all dressing ingredients. Replace lid and shake vigorously until ingredients are incorporated. Refrigerate until ready to use.

Quinoa

  • Cook quinoa according to package instructions.

Salad

  • In a large bowl, combine spinach and shredded cabbage. Toss in fresh berries and 1/2 cup cooked quinoa once cooled. Just prior to serving add the sliced avocado and dressing. Top with sliced almonds.

Notes

I recommend adding avocado and dressing just prior to serving. Salad doesn't keep too long once dressing and avocado has been added.
If you don't have a mason jar for the salad dressing, ok to use a small food processor as well.
