My Go-To White Chocolate Macadamia Nut Cookies

When it comes to cookies, I get serious. I mean no funny business because cookies are cookies and they rank above most all other desserts in my mind. These white chocolate macadamia nut cookies are crispy with a little bit of chewiness in the middle and this is my go-to recipe!

Ingredients
  

  • 1 cup unsalted butter softened (2 sticks)
  • 1 1/3 cups granulated sugar
  • 2/3 cup coconut sugar or light brown sugar packed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon Kosher salt
  • 1 cup coarsely chopped Macadamia nuts
  • 1 cup white chocolate chips

Instructions
 

  • Preheat oven to 350℉ and move rack to middle of oven. Grease cookie sheets and set aside.
  • In a stand-up mixer, beat butter, granulated sugar, and coconut sugar. Add eggs one at a time, beating well after each addition. Add vanilla and mix in.
  • In a small bowl, combine flour, baking soda, and salt. Stir together well with a spoon or whisk.
  • Slowly add to batter on low speed until all of it has been added and well incorporated.
  • With a wooden spoon, mix in the macadamia nuts and white chocolate chips.
  • Drop by rounded tablespoon onto greased cookie sheets, spacing 1 1/2 -2 inches apart.
  • Bake cookies for 9-10 minutes until edges are golden brown. Upon removing cookies from the oven, let sit on baking sheet for 1-2 minutes and then transfer to cooling racks until completely cooled.
  • Store in airtight containers.

Notes

Recipe from Joy of Cooking Cookbook- the only change I made was reducing baking time by 5 minutes as I tend to under-bake my cookies just a bit and then let them cool on cookie sheets for 2 minutes before removing for best results.
