Big Cluster Coconut Almond Granola

Homemade granola is one of my favorite things to make. It's quick, fuss-free, and everyone loves it. This Big Cluster Coconut Almond Granola will be your new go-to granola because it is indeed that tasty!

Ingredients
  

  • 3 cups whole oats
  • 1/2 cup sliced almonds
  • 1/2 cup pepitas*
  • 1 cup unsweetened coconut
  • 1/4 cup coconut sugar
  • 1 egg white lightly beaten
  • 1/2 cup canola oil
  • 1 teaspoon almond extract
  • 1/2 cup honey
  • 3 tablespoons almond butter

Instructions
 

  • Preheat oven to 350℉.
  • In a large bowl combine oats, almonds, pepitas, coconut, and coconut sugar.
  • In a medium bowl whisk together egg white, canola oil, almond extract, honey, and almond butter.
  • Pour wet ingredients into dry ingredients and stir until well incorporated.
  • Spread mixture out onto a rimmed baking sheet evenly.
  • Bake for 15-20 minutes or until granola is golden brown.
  • Let cool completely. I have a hard time waiting until granola is completely cooled to try it but big clusters tear apart easier once it has cooled completely.
  • Enjoy!

Notes

*If using unsalted pepitas, you can add a pinch of salt to dry ingredients otherwise no need to add any additional salt.
In order to get the big clusters, once it is in the oven do NOT shake the pan or mix up the granola at all. Just leave it as is until it is done baking and you will get big clusters! :)
