Roasted rhubarb over yogurt with coconut almond granola makes for the perfect snack, dessert, or even breakfast!

Roasted Rhubarb
- 4 cups chopped rhubarb
- 1/4 cup granulated sugar
Rhubarb and Yogurt with Granola
In small bowls or cups, add yogurt and top with a spoonful of roasted rhubarb. Sprinkle granola on top.
Optional: add some unsweetened coconut flakes on top.
You can also prepare cups and refrigerate for an hour to serve chilled. The roasted rhubarb is delicious warm or chilled. One day I like it warm and the next I prefer chilled! :)
