Roasted Rhubarb with Yogurt and Coconut Almond Granola

Roasted rhubarb over yogurt with coconut almond granola makes for the perfect snack, dessert, or even breakfast!

Ingredients
  

Roasted Rhubarb

  • 4 cups chopped rhubarb
  • 1/4 cup granulated sugar

Instructions
 

Roasted Rhubarb

  • Preheat oven to 350℉.
  • Add chopped rhubarb to a 9x12 or 8x11 baking dish. Sprinkle sugar over rhubarb evenly and mix with a spoon. Spread rhubarb back out evenly.
  • Bake for 20-25 minutes.

Rhubarb and Yogurt with Granola

  • In small bowls or cups, add yogurt and top with a spoonful of roasted rhubarb. Sprinkle granola on top.
  • Optional: add some unsweetened coconut flakes on top.
  • You can also prepare cups and refrigerate for an hour to serve chilled. The roasted rhubarb is delicious warm or chilled. One day I like it warm and the next I prefer chilled! :)

Notes

May substitute any kind of granola for the coconut almond granola.
