Best Summer Picnic Cucumber and Herb Salad

A mix of cucumbers, cherry tomatoes, and diced provolone cheese combined with fresh herbs and greens makes for the perfect summer picnic salad to share with your guests! It's lightened up from the typical cucumber salad with the use of greek yogurt, vinegar, lemon juice, and a touch of salt.

Ingredients
  

  • 3 cucumbers seeded, peeled, and sliced
  • 1 pint cherry tomatoes quartered
  • 1/2 cup chopped fresh parsley
  • 3 tablespoons chopped fresh dill
  • 1/2 cup chopped dark greens spinach and/or arugula
  • 3/4 cup diced good quality provolone cheese
  • 1 tablespoon white vinegar
  • 1/2 cup plain greek yogurt fat free or regular
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon kosher salt

Instructions
 

  • In a large bowl, combine the cucumbers, tomatoes, parsley, dill, and dark greens. Stir well.
  • Add the cheese, vinegar, greek yogurt, lemon juice, and salt. Stir until well incorporated.
  • Garnish with lemon wedges if desired.
  • Serve immediately or refrigerate until ready to serve (recommended!)
