Raspberry Almond Overnight Oats

Ingredients
  

  • 1 cup whole oats
  • 1 cup milk of choice
  • 1 teaspoon honey
  • 1 cup fresh raspberries+ more for topping
  • 1/2 cup plain or vanilla greek yogurt
  • 1 tablespoon heavy cream
  • 1/8 teaspoon almond extract
  • toppings: sliced almonds banana slices, unsweetened coconut, more honey if desired

Instructions
 

  • In a small food processor, process raspberries until coarsely chopped. Transfer to a bowl and mix with the greek yogurt until well blended. Set aside.
  • Using a mason jar in the following order add: 1/2 cup oats, 1/2 cup milk, honey, blended raspberry and yogurt mix, and 1/2 of the almond extract.
  • Repeat with the 2nd mason jar. Refrigerate overnight or for at least 6 hours.
  • Add fresh raspberries, banana slices, almonds, coconut, and another swirl of honey if desired for toppings.
