Favorite Garlic and Herb Roasted Green Top Carrots

Garlic and Herb Roasted Carrots topped with goat cheese are the perfect addition to any meal especially when you are going for healthy but mostly tasty!!

Ingredients
  

  • 3 bunches carrots about 20
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic minced
  • 1 1/2 tablespoons whole wheat bread crumbs
  • Pinch salt
  • Freshly ground black pepper
  • 1 tablespoon fresh chopped parsley
  • 1 tablespoon goat cheese

Instructions
 

  • Preheat oven to 425℉.
  • Snip green tops down to about 2 inches. Wash, trim bottoms, and peel carrots.
  • Place in a rimmed baking sheet. Drizzle olive oil over carrots and mix carrots together to evenly coat them.
  • Toss the minced garlic over the carrots. Sprinkle the bread crumbs evenly over all of the carrots. Add the pinch of salt and black pepper.
  • Sprinkle on the chopped parsley followed by the crumbled goat cheese.
  • Roast for 20 minutes or until carrots are easily pierced with a fork.
  • Serve warm.
