Roasted Apples with Cinnamon Oat Crumble Topping

Roasted apples with a cinnamon oat crumble topping are the perfect addition to any fall meal. They are easy and quick and just the right size!

Ingredients
  

  • 4-5 honeycrisp apples
  • lemon juice
  • 1/2 cup coconut sugar or brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup whole oats
  • 1/2 teaspoon cinnamon
  • 3 tablespoons cold butter cut into thirds

Instructions
 

  • Preheat oven to 425℉.
  • Wash and dry apples. Cut out stem and core using a paring knife carefully and avoid cutting through the bottom. Squeeze lemon juice over apples generously to prevent browning. Set aside.
  • Meanwhile, add sugar, flour, oats, and cinnamon to a medium bowl and mix. Work in cold butter with a pastry cutter or fork until mixture becomes crumbly.
  • Spoon crumble mixture into apples until filled.
  • Place apples in a baking dish and bake for 20-25 minutes or until apples are softened to your liking.

Notes

Crumble mixture makes enough for about 5 medium apples.
