Best Blueberry Waffles (with frozen blueberries)

Ingredients
  

  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 tablespoon granulated sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon Kosher salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 1/2 cups frozen blueberries rinsed and drained

Instructions
 

  • Add eggs to a large bowl and beat with a hand beater or wire whisk until fluffy. Add flour, milk, vegetable oil, sugar, baking powder, salt, vanilla and almond extract. Mix until just combined.
  • Preheat waffle iron, and spray with olive oil spray prior to use. Add heaping 1/4 cup of batter to waffle iron and cook until golden brown.
  • Serve immediately or freeze for later use.

Notes

I like toasting my waffles just prior to eating to get the crispy waffle effect I love whether they are made fresh or are frozen.
