I’m not sure there is a better way to do breakfast, especially with the school year starting again. We always do really well the first few months getting up when we should and having plenty of time for the kids to eat. However, as the year goes on things start to change and by May it’s a miracle when we get to school on time!
That is why it’s necessary for us to have breakfast made as easy as possible. Minus the almonds on top, my kiddos loved these overnight oats.
I’m not much of a breakfast eater but love these raspberry almond overnight oats for supper on busy nights. But in my opinion, breakfast for supper is the best kind of supper.
These overnight oats take about 10 minutes to prepare and then just stick them in the fridge overnight and all you need to do is grab them in the morning and go! Convenience doesn’t get any better than that.
Plus these overnight oats are fruity and a tad creamy which is the perfect breakfast combo.
If you don’t have the heavy cream, it’s okay! They will still be just as yummy. The cream just adds a little something extra.
I seriously believe these overnight oats are better than the others I have made because this time I stuck the raspberries in a food processor to blend them up a bit and mixed them with yogurt. That with the touch of almond extract and oats brought these overnight oats to a new level!
Raspberry Almond Overnight Oats
Ingredients
- 1 cup whole oats
- 1 cup milk of choice
- 1 teaspoon honey
- 1 cup fresh raspberries+ more for topping
- 1/2 cup plain or vanilla greek yogurt
- 1 tablespoon heavy cream
- 1/8 teaspoon almond extract
- toppings: sliced almonds banana slices, unsweetened coconut, more honey if desired
Instructions
- In a small food processor, process raspberries until coarsely chopped. Transfer to a bowl and mix with the greek yogurt until well blended. Set aside.
- Using a mason jar in the following order add: 1/2 cup oats, 1/2 cup milk, honey, blended raspberry and yogurt mix, and 1/2 of the almond extract.
- Repeat with the 2nd mason jar. Refrigerate overnight or for at least 6 hours.
- Add fresh raspberries, banana slices, almonds, coconut, and another swirl of honey if desired for toppings.
