Favorite Childhood Chocolate Chip Cookies

Ingredients
  

  • 1 cup unsalted butter (2 sticks)
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 2 cups semi-sweet chocolate chunks or chips or combination

Instructions
 

  • Preheat oven to 375℉.
  • Soften butter in microwave using microwave-safe bowl for 15-30 seconds so it is just starting to melt. Add butter, granulated and brown sugars, and vanilla extract to bowl of stand-up mixer. Beat on medium until creamy. Add eggs one at a time. Beat well after adding each egg so they are incorporated into batter. No need to use room temperature eggs.
  • Add flour, baking soda and salt to a separate medium bowl and mix with a spoon to incorporate ingredients before adding to batter. This ensures you don't overmix your cookie dough. Gradually add flour mixture to batter on low speed. Once batter is mixed well add chocolate chips or chocolate chunks and mix on low for 30 seconds.
  • Drop cookie dough using cookie scoop onto shiny metal cookie sheets at least 2 inches apart. Bake for 8-9 minutes in center of oven or until edges are just starting to turn golden brown. Let cool on pan 2-3 minutes and then transfer with metal spatula to cooling racks. Enjoy! YUM!
