Super delicious and healthy tuna salad made with aioli, avocado, celery, and shallots packed in pita bread with crisp Romaine lettuce. This is a great midday meal to keep you going the rest of the day.

Oh, and hello August! I love you and the mild 70-80 degree weather that has tagged alongside you. The recent runs, walks, and trips to the park have been totally enjoyable. I know it’s just a tease and will be back to a scorching 95 degrees soon, but right now I am enjoying every second of it. It is getting me in the mood for Fall.
I mean I love summer but c’mon it’s kinda nice being outside for a whole 30 minutes and not sweating simply from watching the kiddos ride their bikes. The mornings have been wonderful with temps in the 60s! So, okay then YES I am ready for Fall. This happens every year. I am so ready for summer and the Hot weather but when things start to cool down I am always okay with it. Really what choice do I have?
What is it about Fall that I love so much? Maybe it’s the mild weather, the endless pumpkin recipes, Husker football…what I really think it amounts to is loading up the munchkins in the mini (it’s so much cooler than it sounds! Promise!) and heading to the pumpkin patch with our 3 kids. It is beyond fun! We love every part of it. It’s like a mini-cation for us and right now that’s all the more we are ready for and I’m liking it. We love picking pumpkins, hayrack rides, the silly corn mazes in an actual cornfield, and the crazy slides. It’s all a hoot with this crew.
So I am planning on taking advantage of the remainder of Summer with a few more pool days, hopefully a cabin day or two, and some tasty grilled food. But when Fall arrives I will be ready. As ready as I am for these tasty TUNA SALAD and AVOCADO PITA POCKETS!

Fast Facts: Avocados are high in fiber with a surprising 13 grams per avocado. They contain 20 grams of monounsaturated fat which is a healthy fat and can contribute to lowering cholesterol. Try adding some avocado to carotenoid-rich foods (carrots, tomatoes, and dark leafy greans) to aid their absorption.
My Favorite Tuna Salad and Avocado Pita Pockets
Ingredients
- 2- 5 oz cans albacore tuna drained
- 3 tablespoons aioli I used diLusso basil aioli
- 1/2 cup celery chopped
- 1 tablespoon shallots or onion
- 2 teaspoons lemon juice
- pinch coarse salt and black pepper
- 1/8 teaspoon cayenne pepper
- 1/2 avocado peeled, seeded, and cubed
- lettuce leaves
- pita bread
Instructions
- In a medium bowl, mix tuna fish and aioli until combined.
- Add celery, shallots, lemon juice, salt and pepper, and cayenne pepper and stir to combine.
- Gently fold in avocado.
- Warm pita bread in microwave on paper towel for 10-15 seconds to prevent bread from cracking.
- Add leaf of lettuce to one side of pita bread and spoon tuna salad over lettuce.
- Fold other side of bread over and serve.
