A PBJ so good you will want to sit down with your kids and eat it too! It’s grilled and made with homemade peanut butter and strawberry sauce on sourdough!
Summertime! I can’t get enough of it you guys.
I’m literally exhausted everyday but I would not have it any other way. My kids are loving it and I am too! My kids are on an extended break from any form of technology, mainly iPads, and it is doing us all good. I certainly think there are some good educational apps to get them into but the main reason for it is to get them thinking about how to entertain themselves when we are not at the splash pad or outside or wherever we may be. It forces them to use their little creative minds and have fun with each other and their toys.
So far so good!
I am thinking we are going to keep this break going and enjoy more creative kid activities such as craft time. I’m relying on Pinterest a lot for this and so far my craft box needs a little TLC before we get into this. It’s pretty much a box of torn construction paper and broken crayons. Send any good suggestions my way!
One thing I am not afraid of handing over to my kids are these amazing grilled PBJs!! They are spectacular and I’m not even kidding. My husband doesn’t even like peanut butter that much and he’s blown away by these!
I really am a creamy peanut butter kind of gal so I definitely didn’t make this peanut butter crunchy but it has the right amount of texture. I used the strawberry sauce I recently put on the blog for the jelly and it works just fine when using a sturdy kind of bread like ciabatta or sourdough. The real finishing touch is grilling them. It gives them a two thumbs up in my opinion.

Fresh strawberries just scream summer to me and I feel so Martha Stewart-ish when I have fresh produce around that’s in season and it doesn’t look like it was picked before it was ripe and then traveled in a truck for days. Ya know?!

Best Grilled PBJ (with Homemade Peanut Butter & Strawberry Sauce)
Ingredients
- Sourdough bread or any type of heavier bakery-style bread
- Quick and Easy Strawberry Sauce
Homemade Peanut Butter
- 4 cups dry roasted peanuts
- 1 tablespoon honey
Instructions
Homemade Peanut Butter
- In a high-powered blender, combine peanuts and honey. Blend for 3-4 minutes. Mixture will get thick at first, but continue to blend and it will become smoother with a bit of texture. If you prefer creamy peanut butter continue to blend for an extra minute or so.
Quick and Easy Strawberry Sauce
- See the recipe here. You can certainly substitute strawberry jam for this strawberry sauce to save time. Do what works best!
Grilled PBJ
- Preheat panini grill to medium high heat.
- Layer sourdough slices with homemade peanut butter on one side and strawberry sauce on the other half. Use a slotted spoon for best results to drain as much liquid as possible from the strawberry sauce.
- Place on panini grill and grill until bread is a golden brown color.
- Enjoy!!
