I am bringing some tasty shrimp and avocado tostados to you all today! Tostado literally means “toasted” in Spanish. According to google, a tostado is a deep-fried tortilla topped with a variety of things including beans, meat, and vegetables. I have added my own little tostado twist to lean over to the healthier side of things. For this tostado recipe, I pan-fried the corn tortillas in a bit of olive oil as opposed to deep-frying them. Let me just say, the flavor of these tostados was like “WOW”!! So, ladies and gents, I present to you some scrumptious shrimp and avocado tostados…

I want to share a few things with you today about my journey so far in this little blog world of mine. I started this blog to share my passion for food and nutrition with the world. In the few short months I have done this I have learned a lot about what it takes to be a blogger…late nights, early mornings, endless amounts of time reading up on aperture, shutter speed, and ISO on my DSLR camera. I have had days where I am just about ready to shoot pictures of my wonderful looking food and suddenly it turns cloudy. And the kitchen lights just don’t do it, unless I want the world to see the yellowish version of my food!
Well, I have come across a little help and joined Food Blogger Pro created by Lindsay Ostrum, creator of Pinch of Yum, and I am learning so much about food photography and being a food blogger that I can not wait to practice what I have learned. There are so many things that go into taking a food photo that I never realized. But one thing I do know is how much fun I am having with this process. I have found my dream job! I mean let’s face the facts–I get to cook food, recruit my husband for some taste testing, take food photos, enjoy the food myself, and for the best part…wait for it….SHARE IT WITH YOU!!!! Back to the food, so we are talking about some wonderful shrimp and avocado tostados here today. WAIT! Hold up! Did I just say tostados? Why yes, yes I did. I, Megan Davidson, a dietitian and food blogger, made yummy tostados. Fried food on a dietitian’s food blog, is that right? I have a few words to share with you in regards to my yummy tostados. What is the role of a dietitian these days? A dietitian is a nutrition expert that provides appropriate nutrition therapy according to a person’s needs. The important point to remember is that there are no good or bad foods, but good and bad eating habits. You can make any food fit into a healthy lifestyle as long as you are able to eat in moderation while also eating a variety of foods. Take away message for today…taste test these tostados! Yum Yum!!
Oh and don’t forget the cilantro dressing and sriracha sauce on top! They will make your mouth happy!!
Shrimp & Avocado Tostados
Ingredients
- 1 pound shrimp cooked
- 4 corn tortillas
- 1/4 cup vegetable oil
- 2 tablespoons lime juice
- 2 tablespoons cilantro chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon sriracha sauce
- 3 teaspoons olive oil divided
- 1 cup canned corn
- 1 cup Monterey Jack cheese
- 1 avocado coarsely chopped
- 2 to matoes chopped
- 1/2 cup red onion minced
For the cilantro dressing:
- 1 cup cilantro
- 1/2 cup plain Greek yogurt
- 2 garlic cloves minced
- 2 tablespoons lime juice
- 1/8 teaspoon salt
- 1/4 cup olive oil
Instructions
Tostados
- 1. Combine vegetable oil, lime juice, cilantro, cumin, coriander, and sriracha sauce in a large bowl and whisk together. Set aside.
- 2. Heat 1 tablespoon olive oil in large fry pan. Add shrimp and heat through. Add shrimp to vegetable oil mixture along with corn, avocado, tomatoes, red onion, and cheese
- 3. Wash and dry fry pan. Using medium high heat, heat 2 tablespoons olive oil just until smoking. One tortilla at a time, pan fry for approximately 3 minutes a side.
- 4. Arrange tostados. Lay tortilla on plate, add scoop of shrimp mixture. Drizzle cilantro dressing on top.
- Optional: Add sriracha sauce on top along with additional Monterey Jack cheese
Cilantro Dressing
- Add cilantro, yogurt, garlic, lime juice, and salt to a food processor. Process until smooth. At this point, slowly add olive oil with motor running. Refrigerate until ready to use.
