Hey Guys & Gals! Looking for some crunch, texture, color, and flavor??? Who wouldn’t want all of that in one salad?! Well…time is a wastin so you better try this 20 minute cucumber, tomato, and corn salad! It comes fully loaded with a delicious cilantro lime dressing.
I love the layers of this salad! You have crunch from the cucumbers, you have juiciness from the tomatoes, you have texture from the corn, and last but not least you have flavor and creaminess from the cilantro lime dressing. All of this in just 20 minutes! Yup yup, I am totally going to keep this in the front of my personal recipe book. It is just too beautiful to even eat, but you and I know I have already devoured this yummy little recipe!

Cherry tomatoes add bursts of flavor to this salad. Red cherry and yellow cherry tomatoes produce double the burst of flavor! Soo awwwwwesome!

20 Minute Cucumber, Tomato, & Corn Salad
Ingredients
- 2 medium cucumbers spiralized or sliced
- 2 cups cherry tomatoes halved
- 1 cup canned corn
For the cilantro lime dressing
- 1 cup loosely packed cilantro
- 1/2 cup plain Greek yogurt
- 2 minced garlic cloves
- 2 tablespoons lime juice
- 1/8 teaspoon salt
- 1/4 cup olive oil
Instructions
- Combine spiralized or sliced cucumbers, tomatoes, and corn in medium-large bowl and mix together.
- In food processor, add cilantro, yogurt, minced garlic, lime juice and salt and process until smooth. Slowly add olive oil and blend until it is incorporated. Add dressing to salad, making sure to coat all of the veggies.
