Layers of mozzarella cheese, turkey, avocado, spicy red salsa and a fried egg sandwiched between a toasted whole wheat english muffin that is created in 15 minutes or less for a satisfying and delicious meal.
I am obsessed with fried eggs lately! And not just with eating them even though they are absolutely delectable. I love making them just to see if the next one is even better looking than the last, like magazine worthy! I’m not gonna lie, I haven’t been a good fried egg maker until recently. And the trick is that there really is no trick, I was just simply making them wrong! I mean I honestly was forgetting the butter to fry them in. Say what?! Ya, you guys, I’m being 100% honest.
It’s amazing to see what a little knob of butter can do to a fried egg. It’s like magic! Oh, and I’m all in on these fried eggs!
My Kindergartner is officially done with school and we have a future first grader on our hands. We did what most families do once summer hits and took full advantage of the beautiful weather.
We headed to the park and ran until we couldn’t run any more.
Some disappointment set in when the kids realized the splash pad wasn’t ready to go yet.
However, we came home to run more in the sprinklers until it started pouring; I really expected no less. Oh, and with the help of Peppa Pig my kids now love jumping in muddy puddles!
The fun didn’t end there though. The rain soon stopped and we were all back outside blowing bubbles, riding bikes, and testing out the new water guns which seem to work just fine. A little DQ treat was in order by mid-afternoon and it turned out to be the messiest treat ever. The kids insisted on eating their ice cream on the front porch but refused to deal with the ice cream melting so I did what any mom would do and stepped in to help!! A few 20 licks later, the ice cream was more kid manageable. The things I do for my kids. By 4pm we were all beat or maybe it was mostly me. Either way it was a wonderful first day of summer vacation. Back at it tomorrow!
It is days like this that inspired this fried egg sandwich. I love a combination of flavors, textures and colors because it makes me feel like I am actually eating something substantial and won’t be “looking” in the fridge in an hour and a half for something to munch on. I’m sorry that I’m not sorry for adding avocado to just about everything lately but the avocados are super good lately and I am eating them nearly every day. Go good fats!
I also had some of my spicy red salsa leftover and couldn’t resist adding some to this fried egg sandwich!
But the #1 reason I love this sandwich is that I can make it in under 15 minutes and during the summer when things are go-go-go this sandwich is perfect! If you don’t have any salsa, it would also be great with a slice of a juicy ripe tomato which I am soo looking forward to!

English Muffin
Mozzarella Cheese
Avocado
Spicy Red Salsa
(Or sub any salsa/ tomato slice)
Egg
Best 15 Minute Fried Egg Sandwich with Spicy Red Salsa
Ingredients
- 1 Whole Wheat English Muffin
- 1 Egg
- 1/2 tablespoon unsalted butter
- 1/2 Avocado peeled, pitted, and sliced
- Spicy Red Salsa or any salsa or tomato slice
- 1 slice Mozzarella Cheese
- Deli Turkey Slices
- Fresh Ground Black Pepper
Instructions
Fried Egg
- In a small nonstick pan, melt butter over medium-high heat. Once melted, carefully add egg to pan not to break the yolk. Reduce heat to medium-low and cook for 4-5 minutes. Reduce heat again to low and continue to cook for another 4-5 minutes until white is set and yolk jiggles just a bit when pan is shook.
Assemble Sandwich
- Toast english muffin. Layer cheese and turkey slices on toasted english muffin. Add avocado slices and salsa on top of turkey. Top with fried egg and some black pepper if desired.
