Hello sweetness!! And you too! The lucky one here at 3SS that is taking a brief look at my post and quickly scrolling down to analyze the amazing ingredients of this fantabulous piña colada ice cream so that you can try it too! I love piña coladas, but I wanted to make a treat that the kids can enjoy too so here it is…piña colada ice cream! And it is sooooooo good! So easy to make too! And that is always a game changer in my book.
I did fail to get the memo that the temperature here was going to sky rocket from the 70s to nearly 90 as evidenced by the melting ice cream. Either way, when I said “Go” my husband ate that cone in 5 seconds flat!
Just to set the record straight, yes I am a dietitian and yes I believe in eating right to live a healthful and happy life. And part of eating right and adopting a healthful lifestyle is enjoying sweet treats like this one…in moderation of course! If you can make healthful choices 80% of the time, you have the other 20% to divulge in some treats! Because why bother with all of the countless hours running, doing yoga, those planks you have a love/hate relationship with, and the health conscious eating if you aren’t able to occasionally enjoy some treats like this one!!
This is a flavor everyone should try at least once! Once you do, you will say toodle loo to the ‘ol vanilla. This recipe is so simple and I used two of my favorite kitchen appliances for it. My KitchenAid Mixer with the ice cream bowl attachment and my immersion blender. They make my time in the kitchen so much easier and I do just love watching the ice cream swirl around in that bowl. It is amazing there is still ice cream left after the 20 minutes of mixing! Oh so yummy!

Pina Colada Ice Cream
Ingredients
- 1 cup heavy whipping cream
- 2 cups whole milk
- 1 3.4 oz box Jello brand coconut cream instant pudding mix
- 1 6 oz container coconut yogurt
- 1 8 oz can crushed pineapple drained
- 1 teaspoon rum extract
- 1 teaspoon vanilla extract
Instructions
- 1. If using KitchenAid Ice Cream Bowl attachment, place bowl in freezer at least 15 hours prior to use. Otherwise prepare ice cream maker according to manufacturer's recommendations.
- 2. In a large bowl, combine whipping cream, milk, pudding mix, yogurt, crushed pineapple, and rum and vanilla extracts.
- 3. Using immersion blender, mix well just until ingredients are incorporated. Pour into KitchenAid Ice Cream Bowl (on Speed 1) and mix for 15-20 minutes. Freeze for 2-4 hours or until ice cream has set. May use other ice cream maker and freeze according to directions of manufacturer.
