What is it about these little legumes that I love so much?
A LOT! Mostly because they can be made into hummus and I am totally obsessed with my Roasted Red Pepper Hummus lately. They are high in fiber and protein containing 13 grams of fiber and 15 grams of protein per 1 cup of chickpeas. Not bad eh! But now I have finally tried roasting chickpeas and they are awwesome. We are talking the perfect blend of crispy straight out of the oven. Who knew!

It’s made with everyday seasonings and buttermilk powder(confession: not sure I have stocked that before tho). And how cool to mix a little of this ranch seasoning mix with some milk and mayo and BAM! You just made homemade ranch dressing. 😋
When I am out eating and I get asked “what kind of dressing would you like with that” I still have that kid-in-me instinct answer RANCH, of course. Followed by the more recent follow-up questions, well what kind of vinaigrettes do you have?
Roasted Chickpeas and My Life Right Now
Now that these little things have come into my life I will be cooking with them a heck of a lot more. I can’t wait to start adding them to pizza, wraps, salads or just eating them as a a snack because they are that good! I mean my life right now is about a solid 7 on the hectic scale and sometimes I would like to be able to grab an adult snack like roasted chickpeas in my hand instead of chocolate chip teddy grahams! So serious! I mean breakfast for me is my coffee and/or vanilla cappuccino but usually both ;). Lunch is an area I am trying to at least get better at for myself because half the time I find the time to make each child what they want or will at least put a hand to rather than throwing it back at me. Again, so serious. I sometimes consider my lunch fancy when I am able to quickly throw down a sandwich on whole wheat bread with some veggies stuffed in there.

30 Minute Roasted Ranch Chickpeas
Ingredients
- 2 15 ounce cans chickpeas garbanzo beans
- 1-2 tablespoons olive oil
- 1/2 teaspoon Kosher salt
- 1 tablespoon ranch dressing mix
Ranch Seasoning Mix
- 1/2 cup buttermilk powder
- 2 tablespoons dried parsley
- 1 tablespoon dried chives
- 2 teaspoons garlic powder
- 1 1/2 teaspoons onion powder
- 1 teaspoon dried dill weed
- 1 teaspoon Kosher salt
- 1/2 teaspoon black pepper
Instructions
Roasted Chickpeas
- Preheat oven to 400℉.
- Rinse chickpeas and drain under cold running water.
- Dry chickpeas. Use 2 paper towels and grab a handful at a time and rub together. After hand drying, I placed them all on a baking sheet and patted them dry with another paper towel. You want them pretty dry.
- Drizzle olive oil over top and distribute it evenly with a rubber spatula. Sprinkle kosher salt over chickpeas.
- Bake at 400℉ for 20-30 minutes until golden brown. Shake pan every 10 minutes while in the oven. You may notice chickpeas have a nice crunch to them while still warm and become amazingly chewy as they cool.
- Sprinkle ranch seasoning mix over chickpeas evenly and stir.
Ranch Seasoning Mix
- While chickpeas are in oven, combine all ingredients for ranch seasoning mix in medium bowl and whisk together until combined.
