This is the kind of dessert that even non-dessert goers will love!! There is nothing quite like key lime pie and when you put it in bar form with some drizzly blackberry topping it becomes unforgettable!
Back in high school I went to The Barn in Hastings with my parents and had this amazing slice of key lime pie and it was the most amazing dessert ever! And life moved on like it always does but oh! that slice of pie was scrumptious.
Well I have always loved key lime anything since and the other day I topped my Chobani Key Lime yogurt with crushed blackberries and I immediately decided I had to create a post combining key lime and blackberries. The results are ah-mazing!
We have been getting so much rain lately that all I can think of to do it bake sweet treats like these bars!! I am still a little confused whether it’s summer or fall. Super yummy chewy ginger molasses cookies or these key lime bars with blackberry topping??
You really can’t go wrong with either of these choices but today we are enjoying the last days of summer with these magnificent bars.
These key lime bars are completely and totally 100% legit. Like you should be eating these bars at Book Club laughing with your friends or outside a cute little bistro sipping on coffee and having this dessert with your best friend.
I will admit that I made these key lime bars with regular limes because key limes were not available around this area and regular limes worked just fine. In fact, I will plan on using regular limes every time.
Summer, fall, whatever season it is it doesn’t matter. You are still going to love and appreciate the sweet goodness of these key lime bars. They aren’t too sweet and the blackberries balance out the tartness of the limes perfectly.
Key Lime Pie Bars with Blackberry Topping
Ingredients
Graham Cracker Crust
- 15 sheets graham crackers
- 6 tablespoons unsalted butter melted
- 2 tablespoons coconut sugar or granulated
Key Lime Filling
- 6 oz cream cheese at room temperature
- 14 oz sweetened condensed milk
- 4 egg yolks
- 1 heaping tablespoon lime zest
- 1/2 cup key lime or lime juice
- 1/2 teaspoon vanilla extract
Blackberry Topping
- 12 oz fresh blackberries
- Lime zest for garnish if desired
Instructions
- Preheat oven to 350℉. Line a 9x9 baking dish with foil or parchment paper. Set aside.
- Add graham crackers to a food processor and process until it becomes small crumbs. Transfer crumbs to a mixing bowl. Add melted butter and sugar and mix until well combined.
- Press into bottom of baking dish evenly. Bake for 10 minutes. Leave oven on.
- Add cream cheese to bowl of a stand up mixer with beater attachment and beat until creamy and smooth. Add condensed milk and mix until combined.
- Add egg yolks one at a time, mixing well after each addition.
- Add lime zest, lime juice, and vanilla extract and mix until combined.
- Pour over graham cracker crust and smooth out with a rubber spatula. Bake for 15-18 minutes or until set. When you give the baking dish a shake, the bars should wiggle just a bit. You do not want the top to brown.
- Chill in the fridge for 4 hours.
- Meanwhile, add blackberries to a food processor and pulse until coarsely chopped. Store in fridge until ready to use.
- Prior to serving, cut bars and top with chopped blackberries and lime zest if desired.
