Roasted rhubarb over yogurt with coconut almond granola makes for the perfect snack, dessert, or even breakfast!
Rhubarb season is my favorite!!
I love it so much I planted rhubarb on the side of our house. I get giddy every time it is time to pick more. Rhubarb is just so summery and bright and it totally works over ice cream but also some yogurt with a little of that granola I made last week!
I knew from the start the coconut almond granola was going to be awesome. However, when it’s paired with some roasted rhubarb and yogurt it is beyond awesome!
I seriously believe all rhubarb recipes are pretty simple but this one is the easiest one I have ever made. It only requires two ingredients. TWO! That’s it.
- Rhubarb
- Granulated Sugar
I have been eating this yumminess every day since. I know it would be great over ice cream but we haven’t had any in the house so I have been eating it over a little greek yogurt with some crumbled up big cluster coconut almond granola I made last week. It’s a 10!
If you don’t have the time to make your own homemade granola, just grab your favorite kind from the store and use that instead! It will still be great!

Roasted Rhubarb with Yogurt and Coconut Almond Granola
Ingredients
- Coconut Almond Granola
- Yogurt of Choice
Roasted Rhubarb
- 4 cups chopped rhubarb
- 1/4 cup granulated sugar
Instructions
Roasted Rhubarb
- Preheat oven to 350℉.
- Add chopped rhubarb to a 9x12 or 8x11 baking dish. Sprinkle sugar over rhubarb evenly and mix with a spoon. Spread rhubarb back out evenly.
- Bake for 20-25 minutes.
Rhubarb and Yogurt with Granola
- In small bowls or cups, add yogurt and top with a spoonful of roasted rhubarb. Sprinkle granola on top.
- Optional: add some unsweetened coconut flakes on top.
- You can also prepare cups and refrigerate for an hour to serve chilled. The roasted rhubarb is delicious warm or chilled. One day I like it warm and the next I prefer chilled! 🙂
