Living in Nebraska sure brings us hot and humid summers!
We are still taking advantage of it and seem to be outside every single day whether it’s 80 or 100 degrees. Our weekend was (I thought) going to be uneventful and all of a sudden I was at Abbott Sports Complex in Lincoln watching our boys ride. The forecast was a mild 83 degrees that felt like a sticky 95 degrees! Of course, I dressed for the mild 83 degree forecast and was sweltering in the heat all day. But oh was it worth it!
Our boys (and the hubs) ride motocross bikes and it has seemed to take up a lot of our days. My opinion of the sport has humorously changed over the last few years. It’s one thing to watch moto after moto on TV but it’s another to see your little boys out there riding in full gear asking you if you saw their last jump.
So, here’s the transition:
2016—
Oh, motocross is on again. Okay, I think I will be going to bed.
2017—
Oh motocross is on again. Can we(you) turn it?

Well, maybe if I don’t watch the boys won’t get hurt. They are pretty cute in their gear, though. Gah, I hope they don’t get hurt. Can they just stay on those Honda 50s forever??
2018—Oh, motocross is on again. Who’s winning Tomac or Musquin? 😂

Me-What do you want to do this weekend honey? Go ride or go to the pool?
Husband-Well there’s not a race on TV, so I was thinking we could do some riding.
Me- Ok. You know I love you right?! 😘

It tastes great after a hot day in the sun. And I’m sure it tastes just as great after a day of being lazy and staying inside too!!
My secret ingredient for this chicken is this Traeger seasoning below!
This chicken is as easy as it is tasty!
I think that is part of the reason why I love it so much! But mostly just because it is so dang tasty!
Ingredients
Chicken breasts
Ranch dressing
Traeger® Blackened Saskatchewan seasoning
Fresh dill
Jalapeño stuffed green olives
Favorite 5-Minute Saskatchewan Chicken
Ingredients
- 1 1/2 lb chicken breasts sliced lengthwise
- Ranch dressing
- 1 teaspoon Traeger® Blackened Saskatchewan seasoning
- 2 sprigs fresh dill chopped
- 4-5 jalapeño stuffed green olives sliced
Instructions
- Preheat oven to 350℉.
- Place chicken breasts in a 9x13 baking dish. Pour enough Ranch dressing over chicken to coat. Use tongs to flip chicken over and coat the bottom evenly and then flip back over. Repeat for remaining chicken breasts.
- Sprinkle Blackened Saskatchewan seasoning and fresh dill over chicken.
- Arrange sliced stuffed olives over chicken breasts.
- Bake for 22-25 minutes.*
