Sweet Potatoes that are baked for an hour and then stuffed with taco seasoned ground beef, shredded lettuce, tomatoes, and cheese and topped with some jalapeños, salsa, and sour cream. Your kids’ skepticism will be short-lived!
Sweet potatoes are under-rated in my mind. They are great as is but can easily be transformed into so many great recipes with just a little bit of creativity. Today, I just had to make these taco stuffed sweet potatoes because they are easy and totally satisfying.
I really prefer sweet potatoes in savory dishes. I didn’t actually start eating sweet potatoes on a regular basis until just a few years ago. But the fact is they can be made kid-friendly!
The prep for these taco stuffed sweet potatoes is kept to a minimum.
And that is half the reason I love this recipe so much, the other of course is they taste phenomenal!
Oh, and maybe there is one more reason- eating one taco stuffed sweet potato is quite filling. Make these stuffed sweet potatoes what you want and add your own favorite taco ingredients though. I have a hard time leaving out any of the ingredients below because they all have their own special place in my tacos!
I particularly love how I can have all the ingredients to stuff the sweet potatoes ready to go by the time the potatoes are done so supper can be on the table as those potatoes are coming out of the oven.

Extraordinary Taco Stuffed Sweet Potatoes
Ingredients
- 4-6 medium sweet potatoes
- 1/2-1 tablespoon olive oil
- 1 cup shredded lettuce
- 3/4 cup chopped cherry tomatoes ~1/2 pint
- 1 cup shredded cheddar cheese
- Toppings: sliced jalapeños sour cream, salsa
Taco Seasoned Ground Beef
- 1 lb ground beef
- 1 teaspoon Ground Ancho chili powder or chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 teaspoon kosher salt
- pinch oregano
- 2 tablespoons water
Instructions
Sweet Potatoes
- Preheat oven to 400℉. Place sweet potatoes on baking sheet. Using a fork pierce sweet potatoes several times on the top. Brush sweet potatoes with olive oil. Bake for 50-65 minutes. Sweet potatoes are done when a fork can easily puncture skin and poke through potato.
Taco Seasoned Ground Beef
- Meanwhile, when sweet potatoes are about halfway through cooking time begin preparing the ground beef. In a large skillet, cook beef over medium high heat and breaking up the beef into small pieces as it cooks. Cook for about 8-10 minutes or until beef is cooked all the way through. Reduce heat to low and add all of the seasonings and water. Stir to mix.
Taco Stuffed Sweet Potatoes
- Cut sweet potatoes open lengthwise across the top and use two forks to smash sides back. These are fun to serve buffet style so everyone can add ingredients to their liking. Set out the ground beef (in skillet or bowl) , tomatoes, lettuce, cheddar cheese, jalapeños, sour cream, and salsa in bowls. Add them to your sweet potatoes and enjoy your meal!!
- If you have little kids that just won't eat the sweet potatoes, I have found it worked to add the toppings to a few chips and they love eating it nacho style.
