I haven’t stopped since. Lately, my cookie making has become more frequent and I’m not sorry. Nothing gives me greater joy than seeing the look on my mom and dad’s face when I bring a container of chocolate chip cookies over to their house. I may be known for my amazing cookies, just ask my brother-in-law!

My Go-To White Chocolate Macadamia Nut Cookies
Ingredients
- 1 cup unsalted butter softened (2 sticks)
- 1 1/3 cups granulated sugar
- 2/3 cup coconut sugar or light brown sugar packed
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon Kosher salt
- 1 cup coarsely chopped Macadamia nuts
- 1 cup white chocolate chips
Instructions
- Preheat oven to 350℉ and move rack to middle of oven. Grease cookie sheets and set aside.
- In a stand-up mixer, beat butter, granulated sugar, and coconut sugar. Add eggs one at a time, beating well after each addition. Add vanilla and mix in.
- In a small bowl, combine flour, baking soda, and salt. Stir together well with a spoon or whisk.
- Slowly add to batter on low speed until all of it has been added and well incorporated.
- With a wooden spoon, mix in the macadamia nuts and white chocolate chips.
- Drop by rounded tablespoon onto greased cookie sheets, spacing 1 1/2 -2 inches apart.
- Bake cookies for 9-10 minutes until edges are golden brown. Upon removing cookies from the oven, let sit on baking sheet for 1-2 minutes and then transfer to cooling racks until completely cooled.
- Store in airtight containers.
