Ice Cream You Scream…We All Scream for Ice Cream!!!
Lame? Maybe, but what else did you expect when I finally get up an ice cream post for the first time this season?
Who out there sees this (besides the hubs) and gets really disappointed when you see the chocolate layer? I really don’t understand you, but can we still be friends? The good thing is with this DIYer, the ice cream layers are totally up to you! No chocolate layer..fine done, 3 layers of chocolate ice cream…you know what’s up.
Current thoughts
What do you guys do for exercise?
Like when you go to the doctor and they ask you how many times a week you exercise, what do you actually say? Moderate? Light? Or I sit on the couch every chance I can get?
Me, for example, I say I have 3 little kids. I run my keister off all day long every day and some nights too. No I don’t go to the gym, and it’s even a rare occasion that I can get away and go for a walk on my own. I break a sweat cleaning our house. I do squats- I squat down and pick up our kids 50 times a day. I do sprints- I sprint as fast as I can every time I hear one of the kids screaming because it sounds like they just got punched in the face only to learn they can’t find the lego they need. I do high knees- I high knee it like the best of ’em every time I step on one of their teeny tiny toys hidden in our carpet.
Exercise means different things to different people. To me it means getting off the couch and staying active in whatever shape or form you find enjoyable and doable at the moment. -Megan Davidson
Depending on the week I may or may not be into yoga. In my world, it’s all about routine. If I stop yoga for a few days, it’s like it gets wiped from my memory and I totally forget to do it. Besides, it’s hard to plank when you have two kids sitting on your back giggling.
More recently, I have felt the effects of trying out a new sport–motorcross. That sport is not for the lighthearted. I have been on a bike twice now (the Honda 50-yes it still counts) and both times I have been hurting for the next 3 days. The first time I actually thought I was getting the hang of it until a downhill snuck up on me and all of a sudden I was eating grass with a few nice burns on the side of my leg and bruises and scrapes along with them. Geesh! I figured since our 5 and 6 year-olds can do it so could I, but the jury is still out. The second time I hopped on with Parker, and he assured me he could do it with me on it. You want to know what happened next don’t you? We ended up in some tall grass that was hiding a bunch of water and yup, we crashed in the muddy water and my shoulder is still feeling the effects of that day.
I haven’t decided if I will be back at it again but I do know I’m gonna need to start packing some extra clothes from now on + maybe a helmet.
At least I have this ICE CREAM CAKE to cheer me up!!
DIY 4-Layer Ice Cream Cake
Ingredients
- 3 Ice Cream Flavors- a pint for each flavor
- I used 1) Vanilla 2) Til the Cows Come Home Strawberry with Chocolate Chips 3) Til the Cows Come Home Chocolate Til the Cows Come Home Brand found at Hy-Vee
- 1 Box Vanilla Cake Mix-check the box because it usually requires water eggs, and vegetable oil.
- Fresh Strawberries
Instructions
- Line a 9x5 inch loaf pan with parchment paper. (If you really want ice cream cake perfection, line plastic wrap inside the parchment paper and allow to hang over the sides.) Spray it with non-stick cooking spray.
- Take out the first ice cream flavor(the flavor you want on top) from the freezer and allow to sit for 10 minutes to soften. Spread the first layer along the bottom of pan spreading it as even as possible. Return to freezer for at least 2 hours.
- Remove the second flavor of ice cream and allow to sit again for 10 minutes. Spread over the first flavor. I thought it worked well to place little scoops of ice cream all over the top layer (the one on the bottom of the pan) and then smooth it out as it will soften even more by that time. Return to freezer and allow to freeze for another 2 hours.
- Repeat the process for the third layer and let freeze another 2 hours.
- Make box cake mix as directed on package. Cut a 9x5 (or piece the size of your pan) but do not remove from pan. Place pan in freezer for remaining time of the last 2 hours.
- Carefully remove the previously cut piece of cake from the pan using 2 metal spatulas and place over the last layer of ice cream. Press down on cake just a bit to make sure it sticks to the ice cream. Return to the freezer and let freeze at least an hour.
- When ready to serve, use knife to loosen ice cream cake from sides of pan. Prior to removing ice cream cake from pan, place the platter or wooden cutting board you will be placing it on directly over loaf pan and then flip. This will help prevent your ice cream cake from falling on the floor!
- Top with freshly sliced strawberries and serve!
