A mix of cucumbers, cherry tomatoes, and diced provolone cheese combined with fresh herbs and greens makes for the perfect summer picnic salad to share with your guests! It’s lightened up from the typical cucumber salad with the use of greek yogurt, vinegar, lemon juice, and a touch of salt.
Summer is in full force at our house.
We are talking swimming almost every day, tennis, and a little golf as well.
To be completely honest, I have been breaking a sweat by 9am! This past week our kids were involved in a golf, tennis, and swimming club and by the end of the week it was 100℉! I won’t leave out that hot wind that smacks ya in the face here in Nebraska. It really gives me that summer glow if you know what I mean.
I really crave some hearty and delicious greens in the summer. I may be crazy but I love veggies. Let me explain a bit more. I love raw veggies that are chopped up and mixed together and tossed with a “can’t get over it” kind of dressing.
This salad is one of those I can’t even get over! It’s fresh, it’s raw, and it totally makes me love summer!!
Along with the change of seasons comes the change in the food (mainly produce) that I purchase and I absolutely love it! When I see those cartons of raspberries for $1.88 I just want to wrap my arms around them and take them all!! But I stick to my usual two and enjoy them.
I especially love all things cucumber related. Cucumber salad, ya had me at cuc. This one I packed with goodness and all the fresh herbs I could handle in one salad.
You guys, this one’s a keeper. The fresh dill and parsley do wonders for this cucumber salad and the quality provolone cheese is a must as well! And don’t leave out those cute cherry tomatoes because they deserve their place in this yummy bowl of goodness.

Dark Greens (Spinach/Arugula)
Provolone Cheese

Best Summer Picnic Cucumber and Herb Salad
Ingredients
- 3 cucumbers seeded, peeled, and sliced
- 1 pint cherry tomatoes quartered
- 1/2 cup chopped fresh parsley
- 3 tablespoons chopped fresh dill
- 1/2 cup chopped dark greens spinach and/or arugula
- 3/4 cup diced good quality provolone cheese
- 1 tablespoon white vinegar
- 1/2 cup plain greek yogurt fat free or regular
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon kosher salt
Instructions
- In a large bowl, combine the cucumbers, tomatoes, parsley, dill, and dark greens. Stir well.
- Add the cheese, vinegar, greek yogurt, lemon juice, and salt. Stir until well incorporated.
- Garnish with lemon wedges if desired.
- Serve immediately or refrigerate until ready to serve (recommended!)
