Our days are shorter and colder but at least we have these amazing garlic tomato crostini to cheer us up!!
Crostini are an Italian appetizer consisting of toasted bread with toppings such as meats, cheeses, and vegetables. I chose to top it with chopped cherry tomatoes, garlic, and green pepper. Simple, quick, and tasty! What more could you ask for?

Yes, I know they are 0-6 and I still am going to watch the games because for what it is worth I believe they are becoming more of a “team” than they have been in awhile. Once you hit rock bottom, the only place left to go is up!

Plus, I kinda feel like Scott Frost and I are buddies because I did have my picture taken with him in my hometown when I was 16. 😂
Back to this yummy garlic tomato crostini!
Call it an appetizer, snack, or lunch I don’t care. It would pair great with a salad, bowl of soup, morning eggs ( yes we did this!), or even some top-notch grilled chicken. It’s that easy and so worth your time, which isn’t a lot BTW.
Ingredients
Fresh Bakery Bread
Cherry Tomatoes
Garlic
Green Pepper
EVOO
S&P
Garlic Tomato Crostini
Ingredients
- Fresh Bakery Bread sliced
- 10-12 cherry tomatoes quartered
- 3 garlic cloves minced
- 1/4 green pepper diced
- 1 tablespoon Extra-virgin olive oil + more for brushing
- Salt
- Pepper
Instructions
- Preheat oven to 350℉.
- Brush bread with olive oil on both sides and place on a rimmed baking sheet. Sprinkle salt and pepper over bread.
- Toast bread in the oven for 15 minutes.
- Meanwhile heat 1 tablespoon olive oil in a skillet over medium heat. Add tomatoes, garlic, and green pepper and sauté for about 5 minutes.
- Spoon tomato mixture over toasted bread and serve warm.
