Summer takes a turn when sweet corn starts to show up! Who doesn’t love the simplicity of some good ‘ol corn on the cob?! But I guess I’m from the Cornhusker state so I really don’t have a choice.
Grilled corn on the cob might be one of my favorite things in the world. One of them anyway. It’s so easy, so delicious…did I mention it’s easy?
That’s the basis for our meals lately.
I have to admit there has been a lot of green things at our table lately but there are few things I appreciate more than a thrown together salad made in under 5 minutes. When I can throw green things on my grilled corn I get pretty excited! Call me crazy but it’s amazing what a little fresh parsley can do for some grilled corn!
But don’t forget the salt and pepper. They are a must too!
Have I mentioned how our little girl has greatly expanded her diet lately? Our little girl that was only eating bananas, crackers, applesauce, and mac n cheese has now moved to a whole new level of eating. I could go on and on by saying it was our hard work and determination to offer her new foods but honestly I think she just decided one day that she was going to start eating different foods and so she did.
Either way she also likes this corn and I am one proud mama!
She was a little concerned about the black kernels but I told her those are the tasty ones…she didn’t believe me.
So get outside and get to it because you will love this grilled corn!
My husband usually hints at me like are you going to boil it today but I always say “NOPE!” We don’t want those nutrients seeping into the boiling water and going down the drain do we?
Course not!

Super Easy Grilled Sweet Corn with Parsley
Ingredients
- 6 ears of corn husks and silks removed
- Olive oil
- Kosher salt
- Black pepper
- Fresh parsley finely chopped
- Juice of 1/2 lemon
Instructions
- Preheat grill to 400℉.
- Brush corn with olive oil on all sides.
- Sprinkle salt and pepper over ears of corn. Repeat on two more sides of the corn.
- Grill for 10-14 minutes depending on your desired level of doneness.
- Remove from grill and sprinkle fresh parsley over corn and give each a squeeze of lemon and serve.
