Guys! We have made it to the FINAL week in the hotel..phew! I was not sure if I was ever going to have a kitchen back! I am having a major case of the kitchen blues. I miss my KitchenAid mixer, food processor, Wusthoff knives, I MISS IT ALL! AND I AM READY TO HAVE IT BACK!! 🙂
This past weekend, we made our weekly trip to see the grandparents and invade my mother’s kitchen to ward off some of my kitchen blues. With the winter storm rolling in soon, I wanted to make something that would be fun to snack on while we are stuck inside. That is where this quick and easy cherry almond granola comes in!! And let’s just be honest, homemade granola is great at any time of the year. My dad and husband can attest to that. Before I took even one picture after baking the granola, my dad had eaten about a cup of it! To make sure I had some to photograph, I had to get out the wooden spoon and smack his hands away…hahaha just kidding!
Granola is one of the easiest things to make and it is so tasty! There is something about making homemade granola that makes me feel like Martha Stewart. Ha! My entire family devours it the minute they see it. I am partial to granola with pecans in it UNTIL NOW! The slivered almonds are the perfect substitute for pecans! This granola has such a clean taste!

Bake at 300 for 20-25 minutes
Granola is such an easy prep food and I honestly never knew how easy it was to make. Plus it is so darn good. It literally takes 5 minutes before you can just pop it in the oven. Nothing easier than that! I topped the granola with dark chocolate chips and dried cherries for a richer taste.
An important secret/tip for making this granola taste wonderful is while baking be sure NOT to stir it AT ALL. Leaving the granola to bake without stirring it creates wonderful large granola clusters that taste and look amazing. Stirring the granola while it is in the oven will prevent these large clusters from forming and I LOVE THE CLUSTERS!

Quick & Easy Cherry Almond Granola (With coconut oil)
Ingredients
- 2 cups whole grain oats
- 1/2 cup slivered almonds
- 1/4 cup coconut
- 1/3 cup dried sweetened cherries
- 1/4 cup brown sugar
- 2 tablespoons coconut oil melted
- 2 tablespoons honey
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 2 teaspoons flax seed
- 1/3 cup dark chocolate chips
Instructions
- Preheat oven to 300 degrees
- In a medium bowl, mix oats, almonds, coconut, flax seed, and brown sugar.
- In a separate bowl, combine melted coconut oil, honey, vanilla, and salt. Pour liquid ingredients into dry ingredients and distribute evenly.
- Line a baking sheet with parchment paper and spread granola out in thin layer. Bake for 20-25 minutes or until lightly toasted.
- Let granola cool. Mix in dried cherries and dark chocolate chips.
- Enjoy!
