It’s officially fall here even though I have been talking about it for several weeks now. I just can’t get enough of this weather. It is the perfect weather for running, bike rides with the kids, and putting off the five loads of laundry to do kind of weather. I swear it was just a couple of weeks ago that being outside made me feel like I either needed to be at the pool or sit in a lawn chair and sweat my worries away. But this 60-70 degree weather makes it hard to stay indoors for very long. Plus I’m wearing out all my shorts and need a little wardrobe change in my life. 😊
The other reason I get all psyched up for this time of year are the endless number of romantic movies on Hallmark Channel that instantaneously bring a cheesy smile to my face. They are truly the best. I can literally watch these movies one right after another, with my chocolate zucchini muffin in hand of course! Now I can relate to the guys who are watching football (motocross in the case of my husband) and are unable to hear anyone within a 10 foot radius. I am pretty sure I become one of those people when watching my Hallmark movies. And you know they only get better as you watch them. I’m always like “Oh, that was so sweet!” And no way is the next one going to beat this but sure enough it’s just as cute. I eventually just make myself leave the room as one ends so I can break the endless cycle of me sitting on the couch getting nothing done on a Saturday.

I am going to just be honest with you. These chocolate zucchini muffins are so moist and at the top of my muffin goals. A little dusting of powdered sugar on top is all you need to create beauties.

Best Chocolate Zucchini Muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 cup ground flaxseed
- 1/2 cup margarine or butter
- 1/4 cup vegetable oil
- 1 1/2 cups granulated sugar
- 2 eggs
- 1/2 cup buttermilk
- 2 cups finely grated zucchini
Instructions
- Preheat oven to 350℉. Prepare 2 12 cup muffin tins with paper baking cups or spray with nonstick spray or olive oil spray. Set aside.
- In a large bowl, combine flour, cocoa, salt, baking soda and powder, and ground flaxseed.
- In a separate medium bowl, cream margarine, oil, and sugar.
- Add eggs and buttermilk and continue to beat until incorporated.
- Add in flour mixture and stir until just combined.
- Add zucchini to batter and mix in.
- Fill cups half to two-thirds full.
- Bake 18-20 minutes or until inserted toothpick comes out clean.
- Remove and cool on wire rack.
- Dust powdered sugar over tops of muffins if desired.
